Great as a side dish or afternoon snack!


  • 1 Plantain Banana sliced
  • 2 cups of kale (rinsed)
  • 1 tablespoon olive oil
  • 2 tablespoons coconut oil (for frying)
  • salt and pepper to taste



Cut the Banana into small bite sized slices

Pre heat the coconut oil in a frying pan and add the banana slices. Lightly pan fry on each side until lightly browned. Place on paper towel to cool when done.

Place the kale in a large bowl with the olive oil and salt and pepper. Massage until covered in oil and kale has relaxed a little.

Add plantain banana to the kale and eat. YUM!
